Ok so I really hesitate to call anything {especially anything I am creating} THE BEST. But this is without a doubt the best at home spinach dip - evah! I used to work at Zio's Italian Restaurant where I was introduced to Spinach and Artichoke dip served with pizza bread and this recipe is so close to theirs I can't hardly tell the difference!
So let's get started making some!
First off let's see what you will need!
1/2 cup sour cream
1/2 cup mayo
1/2 Grated Parmesan cheese + some of the powder stuff to sprinkle on pizza bread
1/2 cup mozzarella or Italian blend cheese + some to sprinkle on top
1 1/2 TBS garlic
1/2 jar artichoke hearts (I like them chopped up small)
1/2 package frozen chopped spinach - thawed and drained
1/8 cup bacon pieces
chopped tomato - opt. as garnish
1 pizza crust
olive oil - for brushing pizza crust
Mix together the sour cream, mayo, cheeses, bacon pieces, and artichokes.
Then add in the thawed, drained spinach - does anyone have a good tip for how to drain frozen spinach? I always have to squeeze it to get the water? juice? out.
Spread that mixture in a shallow baking dish - this one is too tall but I wanted to use it since I got it for Christmas from my brother!
Sprinkle a bit more cheese on top.
Bake for 15-20 minutes at 350 degrees - Doesn't it look yummy!
Meanwhile - open pizza dough lay on baking sheet and bake for 12 min at the temperature on the package. Remove from oven and brush with olive oil then sprinkle with Parmesan cheese and cut into pieces.
Scoop some dip on to a plate along with your pizza bread and garnish with chopped tomatoes!
